Hop flavor questions
Where do these flavor scores come from?
They are a reading of the sensory profiles that breeders and growers publish for each variety, scored 0 to 5 on nine axes. Unlike alpha acid, which is an assay, aroma has no single agreed measurement — careful sources disagree about a third of the time — so treat these as a well-informed description of the variety rather than a figure you can calculate with.
Why are only some hops on the chart?
Brewgravity's ingredient database carries 273 hop varieties, and 172 of them have a documented aroma profile. The rest are mostly high-alpha bittering hops and minor regional varieties with no consistent published description. A variety missing from this chart has not been judged flavorless — we simply have nothing defensible to plot.
Can I use this to substitute one hop for another?
It is a good starting point. Each variety below lists its closest matches by profile shape, which is usually a better guide than the substitution lists that pair hops by country or alpha acid. Check the alpha acid too, and rebalance the bittering addition — matching aroma does not match bitterness.
Does the crop year change the flavor?
Yes, and more than most charts admit. Terroir, harvest timing and storage all move hop aroma, and a hop that has been stored warm for a year is a noticeably different hop. This chart describes the variety at its typical best.
